This lot was double-fermented by Wahyu Setiono, an Indonesian farmer and founder of the Kojoyo Cooperative. Not only does this coffee and Kojoyo help former criminals get back into normal life, but they are also fermentation experts.
Two fermentations bring out the fruit flavors:
First 3 days dry,
then 4 days submerged.
