Excelsa is not a variety of anything. Science just confirmed it is its own species entirely. The locals in Karnataka call it Mara Kaapi, tree coffee, because you don’t walk through shrubs to pick it. You climb. Up into trees 6 to 10 metres tall. Most farmers got rid of theirs years ago. Too much work. Too risky. Komal and Akshay kept theirs and after 84 hours of wine yeast fermentation, turned it into a coffee that scored 86.75 on the SCA scale.
